Robin Young is a great friend to Mr. and Mrs. Wex and we enjoy the company of her family every summer in Quebec. Here’s her it’s called matzo pizza, but it has no matzos!

Ingredients

3-4 medium potatoes, boiled
margarine or butter
3/4 cup cake meal
1/4 cup potato starch
salt, pepper, paprika (if you can get it)
cheese
tomato sauce
any other toppings you fancy

Preparation

Preheat the oven to 400 degrees Farenheit. Mash potatoes with margarine or butter. Mix cake meal, potato starch and seasonings. Knead slightly. Lightly grease a 9×13 pan, put the dough in the pan, smush down to make a crust. Bake for 20 – 30 minutes. Then add sauce, cheese and any other toppings you like. Bake until melted. Cut up and serve.

We call it Matza Pizza, only because it’s a fun word to say. And because then we get to say “Isn’t that a town in Long Island? Or ruins in Peru?” Ok, we’re weird. It’s actually Potato Pizza. Ok, doesn’t really taste like real pizza, but it’s not bad.
